100% chardonnay from the regional appellation of M?con in the South of Burgundy grown on clay and limestone. After a gentle racking of the must, the wine is put in French oak casks of 500 liters (10% new oak) for both alcoholic and malolactic fermentation with wild yeasts and aged on fine lees for 11 months.
